Chatpata Anda Bhurji (Spicy Scrambled Eggs)

Eggs are great for breakfast! We Indians love our Anda Bhurji hot & spicy. Our scrambled eggs have to be spicier & intensely flavored with garam masala, chaat masala & not to forget our fiery red chilli powder. Above all we also like it to have the right amount of zing & tang so tomatoes play an important role in our food & its a must in this fresh & inviting Anda Bhurji. It can be relished whenever you feel like it but it tastes great on a rainy day or when it is really very cold & you long for some quick comfort food … Try this delicious spicy scrambled eggs for breakfast along with some warm buttered toast, which will definitely give a great head start to your day! Ingredients :
4 Eggs (lightly whisked)
3 med. Onions (peeled & finely chopped)
3 med. fresh Tomatoes(finely chopped)
2 fresh Green Chillies (deseeded & finely minced)
1 tbsp. Coriander pwd.
½ tsp. Turmeric pwd.
1 tsp. Red Chilli pwd.
½ tsp. Cumin pwd.
½ tsp. Garam Masala pwd.
½ tsp. Chaat Masala pwd.
A pinch of Sugar
4 tbsps. Vegetable Oil
1 tsp. Butter (optional)
Salt & pepper to taste
A handful of fresh Coriander Leaves (roughly chopped)
Method :
Heat oil in a wok/kadhai/skillet/frying pan till hot.
Add the green chillies, chopped onions & saute till soft & translucent.
Next add the chopped tomatoes & saute till soft.
Then add all the dry spice powders & a pinch of sugar.
Mix well & fry for another 2 minutes.
Slowly pour in the lightly whisked eggs & gently stir once.
Let the eggs settle for a few seconds & stir again to combine well.
Keep stirring till eggs are scrambled.
Cook to desired consistency i.e whether you like it soft or cooked till dry.
Adjust salt to taste & add a sprinkling of pepper.
Garnish with chopped fresh coriander.
For additional flavor top with butter if you wish.
Serve piping hot with buttered toasted bread, pav, fresh bread, chapattis, phulkas, or rotis of your choice.
