Banana & Chocolate Chip Muffins

These muffins are delicious, healthy & have very low fat content which kids as well as adults will enjoy. Banana & chocolate combine to form a perfect pair in these moist muffins.

Have you ever wondered what to do with those over ripe bananas that just sit in that fruit bowl? Well,  nobody will eat them because they are just a bit too brown & soft. I don’t mind them a little soft but the rest of the family likes them firm & not too sweet.

These muffins are fabulous as they have just the right amount of banana which you can taste it. It has silky chocolate chips & has the sweet flavor of vanilla. It is best enjoyed fresh from the oven. If you wish to have enough energy to see you through the day then you must go for this. A great way to enjoy your breakfast with fruit & chocolate!! 😀

Ingredients :

  • 225 gms. Refined Flour(Maida)
  • 65 gms. Granulated Sugar
  • 1 ½ tsps. Baking Pwd.
  • ½ tsp. Baking Soda
  • ¼ tsp. Salt
  • 1 large Egg
  • 4 tbsps. melted Butter
  • 2 tbsps. Olive Oil
  • ¼ cup Milk (@ room temp.)
  • 1 tsp. Vanilla Essence
  • ½ cup Dark Chocolate Chips
  • 1 cup mashed ripe Bananas (2 large Bananas)

Method :
Pre-heat the oven at 180C.

Line a 12 cup muffin pan with liners or you may use paper ice-cream cups like I did.

Peel the bananas & mash them to a puree with your hands or with an electric mixer/blender & keep aside for later use.

In a large mixing bowl, add the flour, sugar, baking pwd., baking soda & salt & combine well.

In another small mixing bowl, add egg, melted butter, olive oil, milk & vanilla essence & mix gently to combine well. Do not over beat.

Then add the mixture of wet ingredients & the banana puree into the bowl containing the dry ingredients & stir gently to mix well. Do not over mix.

Stir in the chocolate chips gently making sure it is distributed well.

Fill the muffin cups to ¾ capacity uniformly & evenly using an ice-cream scoop or a round spoon.

Bake in a pre-heated oven for about 20-25 mins. till the tops turn to a light golden color or do the tooth pick test.

Remove from the oven & cool on a wire rack.

Serve warm or cold with tea or coffee.
