Rice Paper Spring Rolls

Fresh spring rolls are extremely easy & simple to make. They are full of flavor, delicious & healthy due to the goodness of fresh vegetables in them. They make a great appetizer or finger food at parties. It is good for children as an anytime snack or even as a mid morning snack at school. It is a light meal for weight watchers as well.  If you prefer them vegetarian then they are loaded with vitamins but you can add an element of proteins by including chicken, sea food, egg omelettes or any of your favorite meats.

If you are considering a family get together or a fun weekend with family or friends then you can get your loved ones involved in the activity by making them fix their own special spring roll or preparing exclusive ones for each other. You will have the benefit of munching on fresh crunchy & delicious spring rolls within minutes.

These spring rolls are also a healthy option for light meals at work , quick fix meals or at brunch. If you wish to spend a lazy week end or you want to enjoy your holiday with minimum fuss about food or spend less time in your kitchen then you must consider this wonderful option.

So organize your ingredients in advance & bring out your food processor to do the chopping & slicing or get help from your friends & family while you chat, bond & converse with each other & have a great time enjoying & relishing these crunchy spring rolls with this awesome dipping sauce … You will realize that these are so addictive & they will just disappear even before you blink!!!

Ingredients :

  • 4-6 pcs. Real Thai Rice Paper Wrappers
  • 4-6 fresh Cabbage Leaves
  • 1 fresh Cucumber (peeled, deseeded & julienned)
  • 1 fresh Carrot (peeled, deseeded & julienned)
  • 1 cup fresh Cabbage (finely sliced)
  • ½ fresh Green Capsicum (deseeded & thinly sliced)
  • Slices of ham  (Chicken or Pork) quartered or sliced(optional)
  • 2 Egg Omelettes (thinly sliced or quartered)
  • 1 tbsp. fresh Coriander Leaves (finely chopped)

Procedure :
In a sufficiently large bowl, place all the julienned vegetables along with coriander leaves & toss well.

Place a single sheet of rice paper on a plate.

Moisten the rice paper with hot water & let it stay immersed for a few seconds.

Gently drain out the water completely by tilting the plate but without lifting the rice paper.

Let it soften for a few seconds on the plate. Do not lift out the softened rice paper.

Now place a cabbage leaf on the centre of the rice paper.

On top of the cabbage leaf, place ham, omelette, arrange julienned vegetables; in this order.

Fold in both sides of the rice paper. Then fold up one third of the paper over the filling.

Continue to roll the paper to enclose the entire filling. Be gentle & careful while folding.

Place on a plate or tray. Prepare all spring rolls in this way.

Place the plate of prepared spring rolls in the fridge until serving time.

Just before serving cut each spring roll at an angle into two pieces or bite size pieces.

You may even serve them as they are if you like it that way.

Serve with dipping sauce of your choice or prepare dipping sauce as mentioned below.

Dipping Sauce for fresh Spring Rolls :

Ingredients :

  • 2 tbsps. fresh Carrot (grated or shredded)
  • A sprinkling of Red Chilli Flakes
  • 1 Thai Red Chilli (finely diced or sliced)
  • 1 tsp. fresh Ginger (grated)
  • 1 flake fresh Garlic (finely chopped)
  • ¾ cup Water
  • 1 tbsp. Dark Soy Sauce
  • ½ tbsp. Honey
  • 1 tsp. Red Chilli Sauce
  • A dash of Rice Vinegar
  • A sprinkling of Black or White Pepper
  • Salt to taste
  • Sugar to taste (optional)

Procedure :
In a bowl, stir well to combine dark soy sauce, honey, red chilli sauce, grated ginger, chopped garlic, rice vinegar, white or black pepper & sugar with water.

Add in grated carrots, chilli flakes & fresh Thai chilli.

Give it a good stir. Adjust salt to taste.

Serve as a dipping sauce with the prepared spring rolls.
