Quick Egg Masala Toast

To begin your day, it is very important to have a good healthy & nutritious breakfast. Most of the time many skip breakfast as they are in a hurry due to their work commitments & do not give a thought to it or simply because they do not rise early enough to be in time for breakfast. So here is a very wholesome & interesting way of kick starting your day with a very quick & easy option with eggs…

Just go ahead & prepare this awesome, quick egg masala toast which is not only rich in protein but savory, filling  & full of energy. This toast is interesting & not like the regular, boring eggs. It is lightly crispy & delightfully soft in the centre which can be enjoyed by children as well as adults. You can even pack this as a mid morning snack at school or work.

It is great for new mothers who may be tired or running short of time if you have to catch up on too many household chores. Besides, it is a breeze for bachelors too, as the egg mixture can be prepared in a jiffy & pan fried quickly. So say Yes to this fresh hot Breakfast from the frying pan to your plate! Enjoy… 😀

Ingredients :

  • 4 slices Bread (Brown, Multigrain or White)
  • 2 Eggs
  • 1 tbsp. Milk (room temperature) (optional)
  • 2 fresh Green Chillies (finely minced)
  • A light sprinkling of Red Chilli pwd.
  • A pinch or two of Turmeric pwd.
  • 1 cube Processed Amul Cheese (grated) + more for garnishing
  • 2 tbsps. fresh Coriander Leaves (finely chopped)
  • Salt & Pepper to taste
  • Vegetable Oil or Pure Ghee for pan frying
  • 2 fresh Red Thai Chillies (finely sliced) for garnishing

Procedure :
In a shallow dish or a deep soup plate, whisk the eggs till light & fluffy.

Add in a tbsp. of milk, red chilli pwd., minced green chillies, turmeric pwd., grated cheese, a tablespoon of chopped coriander, salt & pepper to taste. Stir to mix well.

Heat a frying pan (preferably non-stick) with a few drops of oil or ghee till hot.

Dip each slice of bread in the egg masala mixture. Just make sure the slice is covered with some chillies, cheese & coriander.

Dip only one side to coat with the egg mixture quickly & immediately place the dipped slice on the hot pan.

You may even use a spoon  to moisten the slice.

Do not soak in the egg mixture for too long or it will turn soggy & crumble.

Meanwhile, top the uncovered slice with the egg masala mixture.

When one side is cooked & lightly golden, flip & fry the other side which is covered with the egg masala mixture.

Use oil/ghee sparingly to fry both sides evenly.

Pan fry on both sides till cooked & lightly golden & crisp. Make sure it does not burn.

Place on a cutting board & slice into triangles.

Transfer on a serving plate.

Garnish with more cheese, chopped coriander & sliced Thai chillies.

Serve hot with your favorite, tomato sauce/ketchup or chutney.

Enjoy at breakfast or as an anytime snack.
