Steamed Bread & Chicken Mince Pie

This is a wonderful savory chicken mince pie which serves as a great comfort food. It is healthy & nutritious.  A superb way of combining leftovers with bread & converting into a delicious pie!  This pie actually calls for bread which is lying in the fridge or even bread which may be a day old. You can even bake this pie.

This is a novel way of creating something different if you are not keen on eating leftover veggies or meats/mince. It is ideal for bachelors & working people who are tired to cook after a hard day’s work & want something interesting. Children who are not fond of regular meals will relish this as it also has cheese in it.

I had a lot of bread & about half a casserole of chicken mince in the fridge. No one was interested in eating it. Just the previous day I had used it to prepare mince potato chops. I was a little tired & running out of ideas when my hubby suggested converting it into a pie! Well, he just went ahead… assembled & steamed it!  My sons were all praise for their dad’s culinary skills & within minutes it disappeared…

Worried about leftovers & want to have a fresh meal…So here is a brilliant way of finding solutions to leftovers & in turn having a well organized fridge! 😀

Ingredients :

  • 8 slices Bread (Brown, Multigrain, White)
  • ½ litre Milk
  • 3 Eggs
  • 250 gms. Chicken Mince (prepared) click here
  • 4 slices Processed Cheese (Amul) as per preference
  • Pepper to taste
  • A pinch of salt
  • Butter or Vegetable Oil for greasing

Procedure :
First roughly tear the bread into pieces & place in a tray or bowl.

In a sufficiently large bowl, lightly whisk the eggs & season with salt & pepper.

Add milk & stir to combine well.

Lightly grease a baking tin/casserole with oil or butter (I used aluminium containers which are a part of a pressure cooker). The dish should fit in a steamer.

Arrange a layer of torn bread pieces.

Then pour sufficient egg-milk mixture to moisten the bread.

Arrange the prepared chicken mince evenly. It should be quite a thick layer.

Place two slices of cheese so as to cover the chicken mince. You may tear out pieces of cheese & arrange if you like.

Arrange another layer of torn bread pieces & pour the egg-milk mixture to moisten the bread.

Arrange cheese on top & sprinkle pepper.

Steam the bread & mince pie for about 25 mins. or insert a knife to test if done.

Take out the container from the steamer & allow to rest for about 15 mins.

Slice & serve warm with your favorite chutney or ketchup/sauce.
