Mediterranean Bread

It was raining, and the entire house was filled with the warm aroma of this wonderful bread which I baked for breakfast. We enjoyed it with butter. I’m sure you will want to bake this bread at home. You can make your own unique filling too.  
Ingredients:
  • 3 cups wheat flour
  • 1 cup maida (refined flour)
  • 10 gms fresh baker’s yeast
  • 1 tsp salt
  • 1 sugar
  • 11/2 cup milk
  • 3 tbsp butter
 For the Filling :
  • 10 cloves garlic (chopped finely)
  • 12 olives (plain or stuffed)
  • 3 green chillies (finely chopped)
  • Few sprigs of celery & coriander (roughly chopped)
  • 1 egg yolk (optional)
  • 2 tbsps sesame seeds (optional)
 Method :
Mix 1 tbsp. water with 2 tbsp. milk.
To this add sugar, salt, fresh yeast & stir well.
Leave it to rise for about 10 mins.
Preparation of the Filling:
Heat 1 tbsp. of butter in a small pan.
Add garlic, green chillies & sauté on a low flame.
Cool the mix & add halved olives, celery & coriander.
Preparation of the Dough :
Sieve the wheat flour & maida & combine.
Melt butter in milk & cool down. Make a well in the flour .
Then add the butter-milk mix  & mix slowly with fingers till it resembles bread crumbs.
Add the risen yeast & knead well for 15 mins.
Add a few drops of oil & knead till oil is incorporated into the dough & the dough is soft, smooth, pliable & sticky.
Place the ball of dough in an oiled bowl.
Cover with a damp tea towel & leave to rise in a warm place for ½ hr.
Knead the risen dough for about 5 mins. Make about a doz. balls.
Then flatten each ball on your oiled palm, enclose the filling in each ball, place on a greased baking tray & let it rise again.
Brush the buns with butter. Then apply a little egg yolk & sprinkle sesame seeds in the centre.
Leave to rise.
Bake in a pre-heated oven at 200C for about 12 mins or till the buns turn a light brown.
Cool slightly on the baking tray. Serve warm.

    of your recipes slowly but steadily. What I truly like is the fact you
    try to make it home-made and you cook from your heart with a lot of love and
    passion.
    I have not yet tried this recipe but i will, instead i am looking for .a pita bread recipe
    that can be done on a tava instead of an oven – thnxs and pl help.
