Spinach Sunrise

A great way of starting your day is by having this delicious & nutritious Spinach Sunrise for breakfast or brunch. It has a wonderful combination of flavors. The colorful
presentation of this dish will also attract children who are a little fussy about breakfast. It can be easily & quickly fixed whenever one is hungry by using left over spinach vegetable or the initial preparation can be planned ahead of time.
 Ingredients :
·         1 bunch fresh Spinach
·         1 med. Onion (chopped finely)
·         2 fresh Green Chillies (cut finely)
·         5 flakes fresh Garlic (chopped finely)
·         1 tsp. fresh Ginger (grated)
·         3 or 4 Eggs
·         1/8 tsp. Cumin pwd. (Jeera)
·         2 tbsps. Vegetable Oil
·         Pepper pwd. to taste
·         Salt to taste
Method :
Pick & retain spinach leaves with tender stalks. Wash & chop spinach in shreds.
Heat vegetable oil in a wok & sauté garlic, green chillies, ginger & onions till light brown.
Add spinach leaves & stir well.
Then sprinkle cumin pwd. salt to taste & mix.
Let it cook for about 2 mins. without closing the lid in its own steam. Sprinkle a little water if it is too dry.
Reduce to low heat & spread out the spinach in the wok  evenly.
Then gently break each egg & place on the spinach without breaking the yolks as shown in the picture.
Sprinkle pepper pwd. & close the wok with a lid & allow the eggs to set on low heat for about 2 mins.
Switch off the flame & let it settle for a minute.
Serve in portions making sure that you lift the spinach along with the whole egg.
Enjoy the Spinach Sunrise with rotis or phulkas or buttered toast.
How to clean Spinach :
After picking spinach take a large pan with water & a little salt. Wash the leaves well to remove soil if any & then rinse several times in normal water till the spinach is clean & drain thoroughly.
Variations :
·         You can steam or bake the Spinach Sunrise in individual bowls or ramekins with cheese.
·         You can use only the egg whites if you so desire .. beat the egg whites slightly & pour evenly on the spinach. Season with salt & pepper.
