Mini Savoury Baskets

These lovely Mini Savoury Baskets are ideal for dainty eats & finger foods. It is an excellent snack to serve at kids parties & with cocktails. You can bake & store these tartlets & rustle up some fillings on short notice & enjoy as an evening snack with a cup of tea or coffee or whenever you are hungry & want to eat something light. You can fill them with quick stir-fries, baked beans, cheesy dips, etc. & relish them. It is handy to serve unexpected guests too. My family loves these Mini Savoury Baskets with assorted fillings & they just disappear the moment they are served! Try these wonderful homemade canapés & you will want to bake them very often coz you will definitely earn a lot of appreciation & smiles!! Enjoy like the way we do.. J
Ingredients :
250 gms. Refined Flour (Maida)
125 gms Ghee
1 Egg
A pinch of salt
Method :
Cream the ghee with salt & then add a little flour at a time.
Beat the eggs & add this to the mixture.
Knead well to form a dough & then roll out the dough to 5 mm. thickness.
Cut with the tartlet mould & press each cut out into the mould.
Prick the bottom of the tartlets with a fork & place them on a baking tray.
Bake at 180C in a pre-heated oven for about 15 mins or till they turn light brown in colour.
Remove from the oven & let it cool down.
Remove the tartlets from the moulds & place on a serving plate.
Fill the savoury baskets with fillings of your choice.
Mince Filling for the Mini Savoury Baskets
Ingredients :
250 gms Mince (Chicken/Lamb/Beef)
3 med. Onions (finely chopped)
3 Green Chillies (finely cut)
2 med. Tomatoes (blanched, peeled & finely sliced)
3 tbsps. fresh Garlic (finely chopped)
2 tbsps. fresh Ginger (grated)
11/2 tsp. Sugar
2 tsp. Vinegar
¼ tsp. Turmeric pwd.
¼ tsp. Garam Masala pwd.
¼ tsp. Red Chilli pwd.
4 tbsp. Vegetable Oil
A cup of water
Handful of fresh Coriander leaves (finely chopped)
Method :
Heat oil in a wok/kadhai/ pan.
Add onions, chillies, ginger-garlic & saute till onions turn soft & translucent.
Then add turmeric pwd., chilli pwd., garam masala pwd., sugar & stir well.
Add tomatoes & cook till soft. Add mince & saute well.
Add a cup of water & vinegar & stir well.
Let it cook on low heat for about 30 mins.
When the mince is cooked, continue to stir till it is dry.
Adjust salt to taste.
Add coriander leaves & mix well.
Remove from heat & fill into the mini savoury baskets.
Garnish with coriander leaves & serve.
Vegetable Filling for the Savoury Baskets :
Ingredients :
1 tin Baked Beans
2 Onions (chopped finely)
3 cloves Garlic (minced finely)
1/3 tsp. Ginger (grated)
1 tsp. Vegetable Oil/Olive Oil
Salt to taste
Garnishing :
Fresh Coriander Leaves (chopped)
Grated Processed Cheddar Cheese
Method :
Heat oil in a wok/kadhai/pan till hot.
Reduce heat & add onions, garlic & ginger.
Saute till the rawness disappears & onions turn soft.
Add the baked beans & stir well. Cook for a minute.
Adjust salt to taste. Switch off the heat.
Fill in the mini savoury baskets.
Garnish with cheese & coriander & serve.
Variations :
Mushrooms & peas, flaked tuna/sardines(tinned), boiled & flaked chicken & mayo, Russian salad, chopped ham/bacon & cheese, chicken pineapple, boiled & grated eggs & cheese… etc.
