Jujubes

These jujubes are soft & chewy gelatine based candy rolled in sugar granules. They are colorful, attractive & flavorful. You can prepare them in flavors of your choice. Jujubes are popular in fruity & citrusy flavors  viz.  raspberry, strawberry, lemon, orange & black currant. Jujubes are loved by kids & adults alike. They are usually half moon shaped or cubed. Some jujubes are sticky & gummy.. Today’s post of jujubes is very easy & quick to prepare. They are light & melt in the mouth. We make these for Christmas & they look very festive when served & taste awesome! We enjoy them throughout Christmas week & New Year. I’m sure you will love making & enjoying this candy.. 😀

Ingredients :

  • 50 gms. Unflavored Gelatine
  • 500 gms. Sugar (granules or pwd.)
  • 1 ½  cups Water
  • 3 Sour Limes/Lemons
  • 1 tsp. Raspberry Edible Color
  • ½ tsp. Raspberry Essence
  • Sugar for Rolling
  • Vegetable Oil for Greasing

Method :
In a bowl, squeeze sour limes & extract juice.

Add a cup of water to it & stir well.

Add gelatine to it & let it soak for 1 hour.

In a sufficiently large pan, add ½ cup of water to sugar.

Place the pan on med. heat & keep stirring till the sugar dissolves completely.

Stir in the soaked gelatine till dissolved.

Let the mixture come to a boil.

Take the pan off the heat.

Add edible color & essence.

Stir well till well incorporated.

Gently pour the mixture in a greased container.

Let it set for about 5 hours.

Cut into small cubes or any desired shape.

Roll in granulated sugar & place on a tray to dry for another 2 hrs.

Serve at Christmas.

Rolling in Sugar :
Place sufficient granulated sugar in a deep bowl. Put in few cut jujube cubes at a time. Toss the cubes till it is completely covered in sugar.

Tips & Variations :

  1. You may make several batches of jujubes using different colors & essences.
  2. You may even divide the above mixture in two sections & make two different flavors.
  3. You may use a glass dish or aluminium container to set the jujubes.

    Thanks for the very descriptive recipes. Would you be able to post a recipe for Neurios and Kulkuls as well. Everytime I make the neurios, they turn out soft, can you let me know now to make them crisp?

  2. This came out PERFECT! I wanted to make “icecubes” for a Frozen themed birthday party and this recipe was brilliant. I substituted blue color & vanilla essence appropriately and just had to come back and share the results 🙂
