Let’s celebrate the First Blog Birthday of “Hilda’s Touch of Spice” with  “Creamy & Juicy Chicken Kabab…  Today’s post is the ever popular kabab which has aromatic spices. It is mildly spicy but very flavorful, juicy & creamy. The combination of cream & curds with the queen of spices viz. cardamom & the sweet soothing spices nutmeg & mace make it a deliciously tasty chicken kabab. This kabab is juicy, velvety smooth & melts in the mouth! 😀

Ingredients :

  • 500 gms. Chicken Mince
  • 1 tbsp. fresh (thick) Garlic paste
  • ½ tbsp. fresh (thick) Ginger paste
  • 2 Onions( paste)
  • 1 Egg (lightly beaten)
  • 2 tbsps. fresh (thick) Cream
  • 2 tbsps. fresh (thick) Curds
  • 1/3 tsp. fresh Green Chilli paste or as per taste
  • ¼  tsp. Red Chilli pwd. (optional)
  • 1 tsp. roasted Cumin pwd.
  • ¼  tsp. All Spice pwd.
  • ½ tsp. Nutmeg, Mace & Green Cardamom pwd.
  • A pinch each of cinnamon & clove powder
  • A sprinkle of White Pepper powder
  • Salt to taste
  • 1 tsp. Vegetable Oil
  • Vegetable Oil/Olive Oil for basting

Procedure :
First, strain out excess water from the curds with a muslin cloth.

Mix together chicken mince with all the ingredients mentioned above with one teaspoon oil.

Marinate for about 3-4 hours.

Brush vegetable/olive oil on the grill pan & heat it till hot.

Scoop out tablespoons of the marinated chicken mince & grill on the grill pan.

Drizzle or brush the chicken kababs with oil from time to time.

Grill for about 4-6 minutes.

Before transferring to a serving plate hold each kabab with a pair of tongs & insert soaked wooden skewers in the kababs.

Alternatively, you may line a baking tray with aluminium foil & grill in the oven or cook in the microwave for 2-3 mins. & then grill the chicken kababs.

Serve the creamy chicken kababs with mint-coriander chutney & lemon quarters or with any of your favorite dips.
