Dudhi Halwa is one of the best, light and satisfying sweet dishes which can be consumed by everyone. The whole family can enjoy it in all seasons. It is specially recommended for those who get easily tired as it helps to improve the stamina.
Dudhi Halwa is easy to prepare and is usually served as a dessert. It can be relished hot or cold. You can even pressure cook it if you wish to save time in preparing it. So here’s the recipe for a quick halwa! 😀
- 500 gms. Dudhi/Ash Gourd (peeled & grated); discard seeds if any
- 200 ml. Hot Milk
- 150 gms. Sugar or to taste
- 100 gms. Mawa/Khoya or to taste (optional)
- 2 tbsp. Pure Ghee
- 100 gms. Mixed Dry Fruits (Raisins, Cashewnuts, Almonds, Pistachios)
- 1 tsp. Elaichi/Green Cardamom pwd.
- ¼ tsp. Nutmeg pwd. (optional)
- A pinch of Salt
In a thick bottomed pot/ non-stick pot or pressure cooker body, heat ghee.
Lightly sauté the dry fruits for a few seconds or till they are very lightly fried. Drain & set aside.
Now, add the grated dudhi, a pinch of salt and sauté on low heat for about 10 mins.
Add the mawa & gently sauté for another 10 mins.
Then, add the hot milk, sugar and give it a good stir.
Let it cook on low heat till the mixture is cooked or till the dudhi is just tender.
If there is any liquid, then cook till the mixture is of semi-solid consistency. This may take about 15-20 mins.
Finally add the elaichi and nutmeg pwd. and give it a good stir.
The dudhi halwa is ready!
Serve hot or cold garnished with mixed dry fruits or your favorite combination of dry fruits.
