Healthy Chickpea Salad

This salad is super simple, easy, full of proteins, rich in flavor and very healthy. There are innumerable ways of making this awesome salad which is so filling & refreshing. It is packed with energy in a bowl. It is ideal as a work or school lunch and excellent to serve in cute little canapés at parties. It will be a great hit especially at children’s parties.

Sometimes we enjoy plain boiled chickpeas without any dressing or masalas and many a time we relish it with various combinations of vegetables & with interesting salad dressings.We have a special fondness for tangy & tongue tickling (chatpata) flavors so this is one of our favorite salad dressing with chaat masala & lime. If you are looking for a quick pick me up then this chickpea salad is just the recipe for you.

You can relish this healthy chickpea salad throughout the week. You can have this salad as a meal on a busy day when you do not have much energy or the mood to prepare a regular meal after a tiring day. It can even be a quick fix light meal if you keep handy the salad dressing and boiled or canned chickpeas in the fridge. I must say it is a good option for working people, bachelors and serves as an after school quick snack for hungry kids. So give it a try… 😀

Ingredients :

  • 3 cups boiled Chickpeas/Kabuli Chana or canned (drained)
  • 1 large Onion (peeled & finely diced)

For the Dressing :

  • 1 fresh Green Chilli (deseeded & finely sliced)
  • 2 pinches Red Chilli powder or to taste
  • ½ tsp. Chaat Masala or to taste
  • A pinch – Garam Masala (optional)
  • Juice of ½ fresh Lime
  • 3 tbsp. Extra Virgin Olive Oil
  • Salt & Pepper to taste

For the Garnishing :
1 tbsp. fresh Coriander Leaves (finely chopped)

Procedure :
In a small bowl, whisk all the ingredients for the salad dressing and set aside until serving time.

Just before serving, combine the boiled or canned chickpeas and the finely diced onions in a sufficiently large serving bowl.

Pour the salad dressing and give it a good mix. Taste to check seasoning.

Serve immediately garnished with finely chopped fresh coriander leaves.

You may even serve it in canapés if you like.
