Bell Pepper can be red, green, yellow, orange and more rarely, white, brown, lavender, dark purple and rainbow (between stages of ripening), depending on the variety of pepper. Green capsicum is well known and popular but now you will also find colored bell peppers in the markets. The red and yellow bell pepper is easily available in the local markets and in super markets in India. Red and orange bell peppers are the sweetest. They are rich in Vitamin C, antioxidants and carotene. The red bell peppers have more nutrients and vitamins, carotene and lycopene.

We consume a lot of bell peppers in our diet. I use them in my bakes, in stir fries, grills or simply stuff them. I also use them in my pulao, and in salads too. With the onset of summer, when the heat is unbearable and temperatures are soaring, I make an extra effort to spend less time in the kitchen and prefer quick meals. I also make sure the meal is tasty, nourishing and fulfilling. I also store ingredients which help me to prepare snacks and meals in a jiffy. Since I always keep some cooked rice in the fridge and also had some diced assorted bell peppers, I could easily prepare this simple but nutritious Assorted Bell Pepper Rice.

We like our food low on spice especially in summer. Besides, this rice is so good for children as well as for those who are recommended to eat moderately spicy or low spice food. This Assorted Bell Pepper Rice is so delicious with the goodness of olive oil and Italian herb Oregano. It pairs well with grilled Zucchini Brochettes or/and Stuffed Bell Peppers. If you like chicken then serve it with Sesame & Red Bell Pepper Chicken. If you love fish then it definitely is awesome with Grilled Fish with Bell Peppers.

This Assorted Bell Pepper Rice is so colorful and refreshing. It is light and absolutely low on fiery spices. In fact, you can totally eliminate red chilli flakes if you intend serving children and invalids. The bell peppers will entice a child to eat. The above mentioned side dishes and salad is also very low on spice and so a perfect accompaniment to the Assorted Bell Pepper Rice which makes it much more nutritious and healthy.

Ingredients:

  • 2 cups cooked Basmati Rice (chilled) or any aromatic rice
  • ½ cup Assorted Bell Peppers (diced)
  • ¼ tsp. fresh Garlic (minced)
  • 3 tbsps. Olive Oil
  • A dash of Red Chilli Flakes (optional)
  • ½ tsp. Oregano
  • Salt to taste

Procedure:

  1. Heat olive oil in a wok until hot.
  2. Reduce heat and sauté minced garlic.
  3. Add diced assorted bell peppers and toss for a minute.
  4. Add red chilli flakes if using and the chilled cooked rice.
  5. Toss the rice for a few minutes.
  6. Add oregano and salt to taste.
  7. Toss again for another few minutes.
  8. Serve hot with Zucchini Brochettes or with your favorite side dish.
