Chocolate Pistachio & Apricot Fudge




This fudge is so simple, easy & quick to make. Like all fudges, it is excellent to gift if you please or enjoy after a wonderful family Christmas lunch or dinner. We all love fudge & this is truly irresistible! I make so many types of fudge to gift friends & serve guests who visit us at Christmas & New Year every year. Any one can make it easily… So here’s the recipe wherein I have added dried apricots just because we like them in our fudge… Enjoy! J

Ingredients :

350 gms. Dark Chocolate (chopped)
397 gms. Sweet Condensed Milk
2 tbsps. Unsalted Butter
½  tsp. Vanilla Essence (optional)
A pinch of Salt
100 gms. unsalted Pistachio nuts
70 gms. dried Apricots (roughly chopped)

Procedure :

First lightly toast the pistachio nuts, let it cool & then roughly chop them.

Put the chopped chocolate, condensed milk, butter & salt in a heavy based sufficiently deep pan on low heat & stir to melt.

Then add the chopped pistachio nuts & dried apricots to the melted chocolate mixture.

Stir to combine well.

Pour the mixture into a square tray lined with foil/cling film/ butter paper with overhang
Smoothen the top of the fudge.

Let the fudge cool thoroughly & then refrigerate until set.

Cut the fudge into squares or desired pieces.

Store in the fridge & serve at Christmas or enjoy whenever you wish.
