Hilda’s Chicken Pizza

I saw these cute little pizza bases in the super market & bought them as it would be handy to prepare a quick snack. I stored it in the freezer to use it later. This evening I baked these delightful pizzas at home. Here is the recipe to my delicious,quick homemade pizza… J 

Ingredients :
  • 6 mini Pizza bases
  • 2 tender Chicken Breasts ( thin strips)
  • 1 Capsicum (thinly sliced)
  • 6 fresh Mushrooms (thinly sliced)
  • 1 med. Onion ( peeled, thinly sliced & flakes separated)
  • ¼ cup fresh Corn niblets (boiled till tender)
  • 6 Olives (plain or stuffed)
  • 1 cup Mozarella Cheese (grated)
  • ½ cup processed Cheddar Cheese (grated)
  • 2 tbsps. fresh Garlic paste
  • 1 tbsp fresh Ginger paste
  • 1 tsp. light Soya Sauce
  • ½ tsp Honey
  • 1 tsp red Chilli flakes
  • 1 tsp dried Oregano
  • 4 tbsps. Virgin Olive Oil
  • 2 tbsps. Butter
  • Salt to taste
  • Pepper to taste
Ingredients for the Pizza Sauce :
  • 2 med. Onions (chopped finely)
  • 4 med. firm red Tomatoes (chopped finely)
  • 4 flakes Garlic (crushed & chopped finely)
  • 4 tbsps Olive Oil + 3 tbsps for drizzzling
  • 1 tsp. dried Oregano
  • ½ tsp Sugar
  • Salt to taste
Preparation of the Pizza Sauce :
Heat olive oil in a pan on medium heat.
Add garlic & cook till light brown.
Add onions & sauté till soft. Then toss in the tomatoes, sugar, & sauté  till soft.
Add oregano & salt to taste. Stir & cook till sauce consistency is obtained.
 Store in a sterilized bottle. I used this sauce for the base of the pizza.
Preparation of the Pizza Topping :
Marinate chicken strips with ginger garlic paste for 10 mins.
Heat 4 tbsps. olive oil in a pan on med. heat.
To this add the chicken strips & stir fry for 3 mins.
Then add sliced mushrooms & stir fry for 2 mins.
Add capsicum, corn niblets, soya sauce, honey & stir.
Sprinkle chilli flakes, oregano & add salt to taste.
Keep the stir fry aside.
Assembling the Pizza :
Lightly apply butter on the pizza bases.
Spread prepared pizza sauce on the bases & sprinkle some cheese
(both cheeses to be mixed together) on each base.
Top with the stir fry.
Arrange a mix of sliced onions & capsicum on top of the stir fry.
Sprinkle mixed cheese & place an olive in the centre of each pizza.
Sprinkle oregano & pepper.
Bake in a pre-heated oven at 180oC for 10 mins or till pizzas are lightly brown & is crisp.
Serve drizzled with olive oil.

Tip : For larger pizzas,  lightly cut the base before assembling so that it will be easy to cut after the pizza is baked.
For Vegetarians : Prepare the stir fry with vegetables only.
