Tomato Soup with Celery & Coriander

A nice hot bowl of thick tomato soup is specially comforting in rainy weather or during winter months. If you are unwell or nursing a cold, this soup is definitely soothing & helps build an appetite. In fact this lovely sweet & tangy soup is inviting & flavorful with celery & coriander. Celery & coriander top the list of my favourite herbs. My family loves this amazing soup all the year round. In Pune, we are blessed with an abundance of fresh vegetables & fruits throughout the year & my vegetable basket is always adorned with luscious red tomatoes which I use lavishly while cooking or in salads. So I’m happy to share this recipe which is extremely loved by my family…

Ingredients :
·     4 fresh med. Tomatoes (Red & ripe)
·     Onion (peeled & chopped)
·     2 flakes fresh Garlic (crushed )
·     3 tbps. Tomato ketchup
·     1 tsp. Sugar
·     2 tbsps. Corn flour
·     4 cups Water
·     1 tbsp. Milk
·     1 tbsp. fresh Cream
·     1 sprig Celery (chopped finely)
·     1 tsp. Coriander leaves (chopped)
·     Pepper pwd. to taste
·     Salt to taste
Method:
In a deep pan place chopped tomatoes, onion, garlic, a pinch of salt & sugar with 4 cups of water.
Place the pan on high heat & bring the ingredients to a boil.
Reduce heat to med. & let it simmer for about 10 mins.
Strain the liquid & keep aside.
Then blend the tomato mix to a puree & strain again. Discard the solids.
In a deep pot mix the puree alongwith the strained liquid, tomato ketchup, chopped  celery; place on med. heat & bring to a boil.
Dissolve corn flour in a little water till smooth.
Then  gradually pour this mix into the boiling tomato soup stirring quickly & continuously making sure it is not lumpy.
Add milk, sugar & salt to taste. Stir well & let it simmer for about 2 to 3 mins.
Garnish with a swirl of fresh cream, a sprinkling of pepper & chopped coriander leaves.
Serve  hot with bread croutons or cheese sandwiches.
